Roasted Turkey Breast with Grilled Apples
Serves three

1 lb Turkey breast (about 4 cutlets)
3 Apples, sliced evenly (Gala, green or both)
¼ cup Dried cranberries
¼ cup Walnuts, chopped
1 tbsp Butter, unsalted
2 tsp Maple syrup
1 tsp Cinnamon
¼ tsp Nutmeg

In a non-stick pan or skillet, warm butter on medium heat. Add apples to pan and coat with butter. Sauté for approximately five minutes, stirring carefully. Then add maple syrup and spices. (If you don’t have maple syrup, you can substitute honey. Do not use pancake syrup.) Sauté for another five to seven minutes until apples are soft to the touch and very fragrant. Apples will start to brown as part of the caramelization process. When finished, move to apples to a small bowl. Add walnuts and dried cranberries. In the same pan, without washing, add the turkey breast and return to a medium heat. Remnants in pan will help to pan sear the turkey to a nice golden brown. Cook for four to six minutes on each side or until cooked thoroughly. Top with apples and serve immediately. Note: Apples will start to brown due to oxidation so spritz with wedge of fresh lemon to preserve color longer if not serving immediately.

Tip: Grilled or baked apples are a great fall staple. Serve as dessert with vanilla ice cream or yogurt, or enjoy at breakfast mixed with oatmeal.
